then imac fits you.
But you need to think whether to use Mac version Office or vmware/parallel + xp/win7 + office.
I don't suggest bootcamp as it needs reboot which is trouble and time consuming

RAM?  As usual, we're always hungry for the RAM. iMac comes with 2x 2GB which are supposed to be good enough for ordinary activities. But it'll be much better if you can buy another 2x 2GB from retails for the sake of graphic/video editing. There is no hurry and you can get it later when necessary. The RAM for iMac is not expensive and the self-installtion is easy too.  Friends of mine are used to replace the factory-default 2x 2GB into 4x 4GB at the beginning for other applications such as VMware Fusion / Parallel, GNS3 etc..
