I see your concern and I bet you must understand new packing design not necessarily implies advanced post-production of the film.
However, I somehow find investments are seldom made on remastering films younger than 10 years old, not even the one you've suggested, Peter Jackson's King Kong (2005). I collect a UK digibook as well as a zavvi steelbook released last year while I was never disturbed by any unsatisfactory visual-audio quality, not to mention Nolan's TKN trilogy (2005, 2008, 2012) partially filmed with IMAX camera.
The exceptions are the old Mavel's Spider-man series (2002, 2004) and a couple more which were claimed 4k-remastered, though it has invited conspirational reviews questioning their role merely as market pioneer of 4K AV hardware without any authenticity.
Going back to your concern, I think I will finally abandon my 1080-TDK BDs and look for a remastered one only when I equip a 76ft tall imax screen at home.
